After identifying a clear opportunity for a high-caliber yet approachable steakhouse experience within the city center, Revell implemented a rigorous in-house butchery program. “I’ve always enjoyed pushing ideas just beyond the expected while still keeping them approachable,” said Chef Revell, “In this case, the goal was to create a menu that filled a gap in the local dining scene. Given our unique position as a historic hotel, a premium steakhouse concept felt like a natural fit.”
This vision is anchored by the 12 oz. Dry Aged N.Y. Strip, a prime-grade cut seasoned with herb butter and served alongside broccolini and a delicate potato fondant.
