TAMPA, Fla. (January 22nd, 2026) –  The Westin Tampa Bay is pleased to announce the official opening of Palmette Brasserie & Bar on January 28th, 2026. The modern brasserie brings a fresh, coastal-inspired dining experience to Tampa’s waterfront, combining vibrant Florida flavors with an inviting, tropical atmosphere.

Palmette’s design and concept draw inspiration from the palmette motif, fronds rising from a single base and opening outward, reflecting the natural way shared meals bring people together. The restaurant features a dynamic open kitchen with a signature pizza oven, indoor and outdoor seating areas, and woven rattan details throughout, creating a relaxed yet spirited setting that captures the essence of Florida’s sun-drenched character.

The restaurant places particular emphasis on its beverage program, with a bar that flows seamlessly onto an outdoor patio offering spectacular waterfront views. The drink menu showcases refreshing, Florida-influenced cocktails, lively flavors, and approachable classics designed to complement the brasserie’s breezy seaside location and encourage guests to settle in and savor the convivial atmosphere.

Palmette’s menu highlights coastal brasserie cuisine and crowd-pleasing favorites crafted for sharing. Guests can enjoy starters including Truffled Frites accompanied by Citrus Truffle Gremolata and Meyer Lemon Aioli, Crispy Brussels Sprouts served with a Calabrian Chili-Citrus Dip, and Ahi Tuna Crudo featuring Florida Strawberry, Fennel, Pistachio and Fresno Chili. Artisanal pizzas include the traditional Margherita topped with local basil and the Diavolo layered with Pepperoni, Soppressata, Calabrian Chili and Pecorino Romano. Entrées feature Pan Seared Snapper prepared with Saffron-Tomato Broth, Vegetable de Provence and Cipollini Onions.

Leading Palmette’s culinary program is Executive Chef Saravanan Appadurai, who brings decades of luxury hospitality experience from distinguished positions at Ritz-Carlton and Marriott properties worldwide.
