The Westin Tampa Bay Introduces Palmette Brasserie and Bar, Opening Early 2026

Tampa Bay, FLA (January 6th, 2026) –  The Westin Tampa Bay will debut Palmette Brasserie and Bar in early 2026, a modern brasserie and bar with a relaxed, tropical feel inspired by Florida’s light and breezy vibe. The restaurant features indoor and outdoor dining, a bar that opens to the patio with stunning waterfront views. 

 

Palmette’s design and concept are inspired by the palmette motif, fronds rising from a single base and opening outward, reflecting how shared meals naturally bring people together. The space features an indoor/outdoor lounge, rattan accents, and an energetic open kitchen with a signature pizza oven, offering a lively and inviting atmosphere.

 

Palmette places a strong focus on its bar experience. The bar opens seamlessly to the outdoor patio, creating a lively, social atmosphere that encourages guests to linger. The beverage program will highlight refreshing, Florida-inspired cocktails, bright flavors, and easygoing classics that complement the restaurant’s breezy, waterfront setting.

The menu highlights bright, coastal brasserie flavors and approachable classics. Guests can enjoy shareable plates such as Truffled Frites with Citrus truffle gremolata, and Meyer Lemon Aioli, Crispy Brussels Sprouts with Calabrian chili-citrus dip, and Ahi Tuna Crudo with Florida Strawberry, Fennel, Pistachio and Fresno Chili. Pizzas include the Margherita with local basil and the Diavolo with Peperoni, Soppressata, Calabrian Chili and Pecorino Roman. Mains include Pan Seared Snapper with Saffron-Tomato Broth, Vegetable de Provence and Cipollini Onions.

Executive Chef Saravanan Appadurai brings decades of luxury hospitality experience to the restaurant’s opening, with a distinguished career leading culinary programs at Ritz-Carlton and Marriott properties worldwide.
