Muffin for the Mornin’

In a recent interview, Erik discusses his inspiration for this Valentine’s Day prix fixe menu and even discloses the secret to the Cupid’s Tears sauce.

Where did you get the inspiration for the ‘gift from OB’ goodie bag?

The first instance of having a take home gift was from Craft restaurant in Los Angeles, by Tom Colicchio. There have been a couple unique occasions to recreate that feeling. But Valentine’s Day hits home as the right time to dote upon our guests.

Which of the Valentines prefix dishes is your favorite?

My favorite dish would be the swordfish. We are planning a special rosemary garlic oil to finish the dish, which already has a unique salsa of olives & raisins. For people who don’t like either, I’d suggest trying it as it tastes nothing like either!

What makes the swordfish dish interesting or unique?

What’s special about the swordfish— very unique tapenade, and an infused oil unavailable elsewhere.

What are your greatest inspirations?

Greatest inspirations – the country of Spain- incredible food, flavor forward, and community based.

What’s the secret to the ‘Cupid’s Tears’ / ‘Dragon Breath’ sauce?

Secret to Cupid’s tears— patience. We steep habanero peppers with garlic, onion, black pepper, but it needs time to marry. We started this process a month ago.

It’s a play on Sean Brock’s goat cheese smashed potatoes.
