Downtown Staple Brings Its Iconic Oysters, Elevated Seafood, and Rare Bourbon Collection to St. Pete’s Grand Central District

SAINT PETERSBURG, FLA  (November 4th, 2025)  —  The Oyster Bar, a downtown staple known for serving the freshest oysters and seafood in town, proudly announces the opening of its new location in St. Petersburg’s Grand Central District. Open Tuesday through Sunday from 4 p.m. to 10:30 p.m., the new space combines the neighborhood’s vibrant local energy with the restaurant’s long-standing reputation for upscale yet approachable dining. Now in its 26th year, The Oyster Bar has shucked over one million oysters and remains committed to sourcing only the best products from trusted suppliers and vendors. The new Grand Central location reflects that dedication, offering a refreshed menu, exciting new dishes, and an impressive cocktail program. Images.

True to its name, The Oyster Bar continues to shine with its signature shellfish. Guests can enjoy beloved classics like Oysters Rockefeller, along with two new standout creations: Oysters Lighthouse, freshly shucked and baked with asiago, roasted garlic butter, and smoked sea salt, and OB Surf & Turf, topped with shaved ribeye, garlic butter, and blue cheese crumbles.

Beyond the raw bar, favorites such as OB’s Sweet & Spicy Buffalo Shrimp, Bacon-Parmesan Crusted Grouper, Shrimp & Crawfish Pasta, and the signature Ribeye remain on the menu, continuing the tradition of flavor guests know and love.

For meat lovers, the menu now features Boneless Black Cherry BBQ Ribs, Porkchop, 12-hour slow-roasted Prime Rib, Filet Mignon with Cabernet Demi Glaze, and a 16-ounce bone-in Ribeye. Two in-house dry agers will allow Chef Joshua Bury to showcase a rotating weekly “Butcher’s Cut.” Seafood fans can also enjoy new weekly Barramundi specials alongside the local favorite grouper.

The Oyster Bar’s cocktail program continues to impress, featuring a rare bourbon and whiskey collection more than a decade in the making. Guests can enjoy sought-after selections such as Pappy Van Winkle, George T. Stagg, Eagle Rare 17, and multiple EH Taylor and Blanton varieties. The bar also offers a balanced lineup of bourbons, botanicals, and signature cocktails, including the All Charged Up, an espresso martini crafted with Absolut Vanilla, Tiramisu Liqueur, and medium-dark roast espresso.

Guests can enjoy daily promotions, including Aphrodisiac Hour from 4–5 p.m. featuring $1 oysters, and Happy Hour from 4–6 p.m., offering $5 House Wines and $6 Specialty Martinis & Tiki Cocktails.

Why did you select this location? 

Being a downtown institution, we wanted to keep that local small town feel that everyone loves about St Pete. The Grand Central district has that atmosphere and then some. Great energy, perfect mixture of small businesses and great local neighbourhood. It all comes together in Grand Central. 

Tell us about the legacy of the Oyster Bar brand.

A downtown staple for anyone and everyone looking for the freshest Oysters and Seafood in town. Now in its 26th year, we’ve shucked over 1 million oysters and can’t wait to shuck 1 million more. With the elevation of restaurants and hospitality in the Tampa market, we have kept our principles of sourcing the best products and cultivated those relationships with suppliers and vendors to provide upscale dining in a casual environment for everyone to enjoy. 

What menu staples will remain?

Tried and tested classics that have stood the test of time. Oysters Rockefeller, OB’s Sweet & Spicy Buffalo Shrimp, Bacon-Parmesan Crusted Grouper, Shrimp & Crawfish Pasta and Ribeye 

What new dishes will be introduced?

Two new baked oysters to compliment the Oysters Rockefeller. Oysters Lighthouse, freshly shucked oysters topped with asiago, roasted garlic butter and bread crumbs. Finished  with chives and smoked sea salt. And the OB Surf & Turf. Freshly shucked oysters topped with shaved ribeye, garlic butter and blue cheese crumbles. Baked to perfection.For all the pork lovers, our Boneless Black Cherry BBQ Ribs are incredible, a soft open favorite, similar story with our Porkchop.

Two Dry agers are in-house and now feature a 12-hour slow-roasted prime rib, Filet Mignon with Cabernet & Demi glaze reduction and 16-oz bone-in ribeye. Every week, Chef Joshua Bury will also be showcasing his ‘Butcher’s Cut’ featuring a variety of rotating steaks and aged steak options.  

With Grouper always being a local favorite, we have complemented our extremely popular grouper with the Austrian equivalent. Each week we’ll be featuring Barramundi, a mild & flaky white fish with various preparations.  

Tell us about the cocktail program?

Oyster Bar will be boasting one of the most sought-after bourbon collections in town, featuring the incredibly scarce Pappy Van Winkle Whiskeys, George T Stagg, Eagle Rare 17, Caribou Crossing, Rock Hill Farms and multiple varieties of EH Taylor and Blanton Whiskeys. To round out the menu, great selection  that Balances the Spirits, Flavor, and Flair — Every Time. From Bourbons to Botanicals, we’ve got you covered.

What is unique or interesting? 

Extremely rare Bourbon Whiskey section that has been in the making for over 10 years

What is your favorite dish on the menu & why?

So many stick out, one of the perks of working with the Chef. My personal favorite is the Filet Mignon. The steak is killer, but when paired with the Cabernet Demi Glaze, its next level.

What’s your favorite cocktail on the menu & why?

All Charged Up, an Absolut Vanilla-based Espresso Martini featuring Tiramisu Liqueur and medium-dark roast espresso. It hits the spot.
